It is a hearty beef stew that is typically prepared on weekends both in homes and in many local sodas. The stew combines a number of locally grown ingredients to help provide its rich taste, including cassava, carrots, corn, plantains and taro roots.

It is a traditional dish of Costa Rica, made with rice and red or black beans. The beans are quickly cooked until the juice is almost consumed

It consists of a cabbage salad known as curtido (chopped cabbage, tomatoes, onions, and chili pepper marinated in vinegar and salt), boiled yuca, and chicharrones (fried pork belly or fried pork rinds), all wrapped in a banana leaf.This dish is often eaten without utensils, and it is frequently served to visiting family and guests, as it is generally easily and quickly prepared.

Versions always include the name of the vegetable which represents the main ingredient to the dish (potato picadillo, ayote picadillo, etc.) and which is chopped and cooked with bell peppers, onions, stock, herbs and spices. It can include some type of protein but that is not essential. It is often served with tortillas or rice.
